The Chelti Winery was founded in the small village of Shilda in 2001 by Giorgi Mirianashvili, but his family’s winemaking roots here date back over a century to when they built their first cellar on the property. Today they have some 80 hectares of land which includes prime vineyards at the foot of the Caucasus mountains, modern winemaking facilities, and an underground cellar where the wines mature in the naturally cool temperatures.
Saperavi is one of Georgia’s most famous ancient grape varieties and its name means “dye” thanks to the deep inky hues of these wines. This cuvee is fermented and aged for 6 months in the iconic “qvevri” or huge earthenware vessels which are traditionally buried in the ground or the floor of the winery. These unique egg-shaped amphorae are lined with beeswax and help to preserve the unique character of the grape and terroir. After this process is complete, this cuvee is then aged in oak barrels for 12 months.
The result of this technique is a rich yet balanced red wine which boasts Saperavi’s classic intense colour and enticing hints of cassis, plum, and crushed wild berries. The smooth tannins and medium body make this a great match for hard cheeses, red meat dishes, and game stews.
